xampp - What's a good local development setup that allows quick switching between versions of the components?

Question

Until now I've used XAMPP for Windows. But I'd really like a setup where I can open a control panel, flip a switch, and voilà, PHP is now running 7.2 or 5.6. Same with MySQL/MariaDB and Apache. Bonus points if it can remember settings on a per-project basis. What tools/workflows allow for this?
